BLUEBERRY FAT BOMB CAKE.

INGREDIENTS                                                                                                      

1 cup cream cheese

1 cup coconut flour

1/2 cup fresh or frozen blackberries

1/2 tsp stevia

1/4 teaspoon vanilla powder

1 tablespoon lemon juice

Raspberries for topping

Cranberries for topping 

Directions:

  • Place cream cheese, coconut flour and blueberries in a pot and heat over medium heat just until well combined.
  • In a food processor or small blender, add coconut oil mix and remaining ingredients. Process until smooth.
  • Spread mixture into a small 6×6 inch container.
  • Refrigerate one hour or until mix has hardened.
  • Remove from container and cut into squares.
  • Top with fresh raspberries and cranberries.
