2 tbsps. Butter softened

2 oz. cream cheese softened

1/3 cup Trim Healthy Mama Gentle Sweet or my sweetener

4 eggs

2 tsp almond extract

4 oz. half and half

1/2 cup almond flour

1/2 cup coconut flour

1/2 cup ground golden flax or additional almond flour

1 tsp baking powder

1/4 tsp. salt

½ cup almonds for topping


  • Preheat oven to 350. Grease a square loaf pan with butter or cooking spray.
  • In a bowl with an electric mixer combine all the batter ingredients. Mix thoroughly. Pour into the baking dish and spread evenly.
  • Sprinkle halves almonds on top of the batter.
  • Bake at 350 for 40 min until golden. If the topping starts to get dark cover with foil for the last 10 minutes.
