The keto cauliflower tots are full of flavor and very ketogenic diet friendly. Keto snack ideas are great for in between meals, especially on the go, so these tots are the perfect keto snack solution.

You can use a box grater for the cauliflower, but you definitely want a min muffin tin for this low carb keto snack, because the tots will cook evenly and get really golden on the outside.

So here’s the story…

There are like a million and one diet plans available to you these days. You may be overwhelmed with your options. I know that I get overwhelmed with mine!

It’s for this reason that, once you’ve decided on a particular diet, and prepping healthy meals is the next step, you only want to seek out food and drink recipes that fit within that particular diet plan. Straying from your original chosen plan may very well lead to failure. You may find yourself starting all over from scratch.

For this reason, I suggest starting a diet-focused recipe library. So you’d want to compile videos ONLY related to raw-food veganism, if that happens to be your chosen diet plan.

Pretty basic stuff, right? But it’s super important.

I only bring this up because I’ve been guilty of hopping from one plan to the next myself. Why did I do this? Only one reason…

Foods that one diet program won’t allow you to consume, a totally different diet encourages. The grass always seems greener on the other side. If the person on the screen tells you it’s healthy, you should probably eat it, yeah? And one thing that’s clear… Food videos are, in many cases, 100 percent seductive. 😉

Choose a lifestyle that you’re thrilled to stick with. That’s how long-term results will be achieved. At the end of the day, eating healthy foods and not going into a crazy caloric surplus may be enough to help you reach your goals.

Seems pretty logical, really. Put the right amounts of the right fuel into your body, and reap the rewards of a healthy body and physique. Add some exercise into the mix and look out!

You’ll probably recognize this as standard, conventional wisdom. It probably earned its right to be!

Not all diets are calorically restrictive though. Many diets have more of a macro-nutrient ratio focus. It could be detrimental to your results to stray from your diet’s particular ratio.

Keep your eye on the prize! Don’t stray.

INGREDIENTS
1 large head of cauliflower cut into florets
1 cup of shredded cheese like cheddar or mozzarella
2 eggs
2 tablespoons freshly chopped Italian flat leaf parsley
½ teaspoon smoked paprika
¼ teaspoon cayenne pepper
1 teaspoon olive oil
Kosher salt & pepper
Non-stick spray

INSTRUCTIONS

This recipe works best with a mini muffin tin, check out the one I like best in the Amazon link in this post.
Pre-heat oven to 400 degrees F. Use a box grater or food processor with a grating attachment, and grate all the cauliflower florets. Place the grated cauliflower in a kitchen towel and squeeze as much moisture out as possible.

Flex those biceps, the more water you squeeze out, the more golden your tots will be. Place the cauliflower in a large bowl and add all of the remaining ingredients(except the non-stick spray), ½ teaspoon salt, and few cracks of pepper. Mix well then thoroughly spray the mini muffin tin with the non-stick spray, do this over the sink as to not make as mess everywhere.

Use a spoon to add the cauliflower mixture in the tins and pack them so they come all the way to the top. Make sure you pack them tight using the spoon. Bake for 20 minutes, or until nice and golden all around the edges. Remove from the oven and let sit for 5 minutes, then remove from muffin tin and enjoy!

Tots will keep in the fridge for 3 days, or in the freezer for 2-3 months. When ready to re-heat, place in the microwave or better yet, re-heat in a 350 F oven for 6-8 minutes.
