KETO CHICKEN WITH TOMATOES

INGREDIENTS

  • 6 chicken thighs, with skin
  • 1 lime, halved
  • 1 big bunch spring onions, roughly chopped
  • 1 tsp garlic, minced
  • ½ tsp dried thyme
  • 1 lime, juiced
  • 2 tbsps. avocado oil
  • Salt and pepper to taste
  • Cherry tomatoes

DIRECTIONS

  1. Mix the spring onions, garlic, dried thyme, lime juice, avocado oil, salt and pepper in a food processor and blend to a purée
  2. Cut chicken thighs into 3 inch pieces and pour the marinade over the chicken rubbing it into all the crevices.
  3. Cover and leave to marinate overnight in the fridge.
  4. To cook in the oven, heat to 180C/160C fan/gas 4.
  5. Put the chicken pieces in a roasting tin and cook for 45 min until tender and cooked through.
  6. Serve with cherry tomatoes and spinach.
