What’s better than brownies? Brownies with icing!

I made some sugar free royal icing and it turned out amazing. The only problem I had was that I didn’t have a hand or stand mixer to whip it up enough, so my icing was a little runny but still worked out well!

So here’s the story…

Diet plans are in no short supply, my friend. It can be overwhelming to decide.

It’s for this reason that, when you’ve made your choice, and and you’re watching these recipe videos to get meal ideas, you need to adhere to your chosen diet plan. It can really hinder your success to stray from your chosen path. You’re very likely to wind up in a position where you need to start all over from scratch.

It’s really a good idea to build up a diet-focused recipe library on your computer or device. So if you’re going low-carb, then build up a low-carb recipe library.

Does this make sense?


I’ve been guilty of hopping from one plan to the next myself, which is why I bring this up. And I’ve done so for one simply reason…

Items that one diet plan allows, and perhaps even encourages, some other plan is likely gonna limit or forbid. I mean, it’s still officially “diet food,” even if it’s not your diet… right? And counter-arguments can be pretty compelling. And one thing is clear… Culinary videos are usually pretty damned seductive. 😉

Clearly, you need to stick to your chosen diet plan long enough to see results. Reaching your weight loss goals may be as simple as eating natural foods and limiting your caloric intake.

Seems pretty logical, really. The fat should come right off if you control what and how much you eat and drink. Add some exercise into the mix and look out!

This is conventional weight loss advice. And it probably has that designation for a reason!

Not all diets are calorically restrictive though. Diets are often effective because of their macro-nutrient ratios. These are often pretty meticulously calculated, and straying from the prescribed ratio may jeopardize your results.

At least stick with one thing long enough to see results!

What you’ll need:

BROWNIES:

1/4 cup (60g) sour cream
2 tbsp dark cocoa powder
2 tbsp regular cocoa powder
2 eggs
1/4 cup (50g) butter – melted
1/4 cup (50g) sugar substitute (I used erythritol)
1 cup (100g) almond flour
1/2 tsp baking powder

ICING:

1 tbsp meringue powder (egg white powder)
1 cup (140g) powdered sugar substitute
1 1/2 tbsp cold water
1 tsp vanilla
assorted food colouring

In a mixing bowl, whisk together the brownie ingredients.

Pour onto a lined cookie pan or casserole dish and bake for approx. 15 minutes at 350°F / 175°C or until a toothpick comes out clean.

Set aside and let cool.

While your brownies cool, whisk together your meringue powder (egg white powder) and powdered sugar substitute.

Add in the cold water and use a hand or stand mixer to whip the mixture to stiff peaks, or desired consistency if you want it a little bit more runny.

Separate into different bowls and use the food colouring to change the colour of each bowl of icing.

Cut the brownies into triangles – it should make roughly 15.

Use a piping bag or ziplock bag to decorate your brownies!! Enjoy!

This makes approximately 15 brownies.
