HOMEMADE KETO ICE-CREAM WAFFLES.

INGREDIENTS

2 cans coconut milk

2 cups heavy cream

1 tsp stevia

1 tsp. pure vanilla extract

Pinch kosher salt

1/2 cup blueberries chunks

1 keto waffle for serving

Raspberries and blueberries for topping 

Directions:

  • Chill coconut milk in the fridge for at least 3 hours, ideally overnight.
  • Extract coconut cream into a large bowl, leaving liquid in can and beat until creamy and fluffy.
  • In another large bowl, beat heavy cream until soft peaks form. Mix stevia and vanilla in this cream.
  • Mix whipped coconut into whipped cream and carefully fold blueberries chunks in this creamy mixture.
  • Pour mixture into a loaf pan.
  • Freeze until solid, about 5 hours.
  • For serving set waffle in plate scoop ice-cream over unsweetened waffles. Top with berries and enjoy.
