INGREDIENTS

  • 1 lb. ground turkey
  • 1 cup grated Parmesan cheese
  • 1 large egg
  • 1 tsp. garlic, minced
  • 2 tbsps. Italian seasoning
  • Salt and pepper, to taste
  • 2 tbsps. avocado oil
  • ½ cup coconut milk

DIRECTIONS 

  1. In a large mixing bowl add the ground chicken, Parmesan cheese, egg, garlic, Italian seasoning, salt, and pepper. Mix together, then roll out 25 meatballs.
  2. Heat a large skillet with the avocado oil, over high heat. Once the oil is hot, add the meatballs, and cook until they are browned evenly and firmed.
  3. Add coconut milk and cook for 10-15 minutes. Until milk is dried and balls are cooked
  4. Sprinkle parsley on top and serve.
