Today, we tackle a favorite recipe for Enchiladas Suizas, also called Enchiladas Suisse.
This delicious, creamy, casserole-style dish easily lends itself to a low carb version with a few alterations from the original recipe.

Alright, so let’s proceed…
There are like a million and one diet plans available to you these days. If you’re like me, you’re probably overwhelmed by all of the options.
So when the choice has been made, and and you’re watching these recipe videos to get meal ideas, you need to adhere to your chosen diet plan. Failure to stay on your chosen path can prove detrimental. You just may wind up back at the starting line.
You’d be well served, for this very reason, to build up an online library of recipes within your chosen plan. If you’re going low-calorie, then compile low-calorie recipes. If you’re a low-carber, then you’ll want low-carb recipes.
In the past, I’ve definitely hopped from one thing to the next… like crazy. Why did I do this? Only one reason…
What one diet doesn’t allow, another, seemingly equally legitimate eating plan permits, and perhaps even encourages. I mean, it’s still officially “diet food,” even if it’s not your diet… right? If the person on the screen tells you it’s healthy, you should probably eat it, yeah? And one thing that’s clear… Meal prep videos are, in many instances, quite tough to resist. 😉
If you expect to see lasting results, you need to stick to your chosen plan of action. Reaching your weight loss goals may be as simple as eating natural foods and limiting your caloric intake.
Seems pretty logical, really. Don’t pig out all day, steer clear of prepackaged junk, and you should see some pretty powerful results. Raising your activity levels will also prove beneficial (obviously).
This is surely the world’s most popular weight loss advice. There’s probably good reason for this!
Of course, not all diet plans follow this model. And even if they don’t, you may want to stick with them anyway. Many diets put more of an emphasis on macro-nutrient ratios. It could be detrimental to your results to stray from your diet’s particular ratio.
At least stick with one thing long enough to see results!

LOW CARB ENCHILADAS SUIZAS / SUISSE
1/3 cup chopped onion
1 clove minced garlic
1 T. bacon fat or oil
8-ounce can tomato sauce + 1 can water
4-ounce can chopped green chiles (do not drain)
3 cups chopped, cooked chicken
2 cups heavy whipping cream
1/2 cup water
4 chicken bouillon cubes (or equivalent)
1/2 pound grated Swiss cheese
Salt & pepper to taste
10 low carb tortillas from Keto Connect

1. Over medium heat, saute the onion in the oil util soft and translucent.
2. Add garlic, tomato puree, chilis and chicken.
3. Simmer for 10 minutes. Season to taste with salt and pepper
4. Gently heat the 2 cups of heavy cream and 1/2 cup of water over low heat and dissolve bouillon in cream.
5. Fill each with 1/4c. chicken mixture. Roll up tortillas and place seam-side down in a 9×13 casserole dish.
6. Pour the cream mixture over tortillas and sprinkle with the grated cheese.
7. Bake at 350 degrees for 30 minutes.
Makes 10 Enchiladas

NET CARBS: 6.7g
