POACH EGG ON AVOCADO TOAST

- 1 slice keto bread, toasted
- 1/4 avocado, mashed
- 1 tsp avocado oil
- 1 large egg
- sea salt and black pepper to taste
- Heat water in pan with oil over medium heat.
- Once water is hot, add egg and cook until cooked through.
- Mash avocado in a small bowl with salt and pepper and mix well.
- Spread mashed avocado over toasted keto bread, top with egg.
- Drizzle some salt and pepper on top.
- Serve with bullet proof coffee and enjoy!
