RASPBERRY COCONUT CHIA PUDDING

         INGREDIENTS

  • 3 tbsps. chia seeds
  • 1 cup almond milk
  • 1 tsp. vanilla extract
  • ½ cup coconut cream

STRAWBERRY JAM

  • 1 cup raspberries,frozen
  • 1 tsp. coconut sugar

TOPPINGS

  • 1 tsp. raspberries jam
  • Berries, fresh or frozen 

DIRECTIONS:

  1. Mix chia seeds, almond milkand vanilla in a jar or container. Stir and refrigerate overnight.
  2. In the morning, remove from fridge.
  3. In a pan, place frozen strawberries and coconut sugarand cook on low for about 15 minutes. Then, with an immersion blender blend the jam smooth and cook for another 2 minutes.
  1. For serving, jam in jar, add a layer of chia pudding and top with a layer of coconut milk.
  2. Top with some jam and berries (fresh or frozen).
  3. Serve and enjoy!
