I just wanted to say a few things…

Clearly, there are many diet plans in the world. You may be overwhelmed with your options. I know that I get overwhelmed with mine!

As such, when you’ve committed to a diet, and you’re looking to prepare your own tasty meals, sticking to your chosen diet is of paramount importance. Wavering could be detrimental to your weight loss success. You might wind up back at the starting line.

For this reason, I suggest starting a diet-focused recipe library. If you’re going low-calorie, then compile low-calorie recipes. If you’re a low-carber, then you’ll want low-carb recipes.

Know what I mean?

I’ve been guilty of hopping from one diet to the next. And when I really think about it, there’s only one reason why…

Menu items that one plan allows, another, seemingly equally legitimate diet plan will probably disallow. And let’s call a spade a spade… Recipe videos can be quite irresistible. 😉

Clearly, you need to stick to your chosen diet plan long enough to see results. Of course, it could be said that any diet that focuses on all-natural foods and reasonable portion sizes can be enough all on its own.

Makes sense. Don’t pig out all day, steer clear of prepackaged junk, and you should see some pretty powerful results. Add some exercise into the mix and look out!

This, of course, is conventional wisdom. And this is for good reason!

Even still, if you’re trying to stick to a particular plan, you may want to stay the course. With some diets, macro-nutrient ratios are more important than calories consumed. And you may not want to play around with those.

Please stay the course. Your future self will thank you for it!

Ingredients
Dough
4 cups shredded mozzarella cheese
4 ounces cream cheese
1 cup coconut flour I used Bob’s Red Mill
4 eggs
1 tsp vanilla extract
1 tsp vanilla liquid stevia
Filling
1 1/2 packages cream cheese or 12 ounces
1 egg beaten
1 tsp vanilla extract
1 tsp vanilla liquid stevia

Instructions
Preheat oven to 375 degrees F.
In a microwaveable bowl add the mozzarella cheese and cream cheese.
Microwave 1 minute and 30 seconds.
Stir until combined.
Whisk flour, the eggs, vanilla extract and vanilla stevia together until combined.
Add this to the cheese mixture and continue to stir or use wet hands to combine.
Spread mixture onto a parchment lined baking sheet or use a rolling pin between two pieces of parchment. (see video)
Slice on sides of dough at an angle. See video. Set aside to make filling.
Add the filling ingredients to a stand mixer and blend on high until smooth.
Spread down middle of dough and fold sides across the middle.
Bake for 15-18 minutes or until golden brown.

Allow to cool about 10 minutes before serving if enjoying warm or cool completely and refrigerate.
Keep refrigerated.
